My Story

Hi, I’m Jem— avid fermenter, Japanese cook, facilitator and certified permaculture designer based in Berlin. Half Japanese and raised in London, I grew up craving Japanese flavours and umami (and wondering why we didn’t eat ramen every day!). Later I fell deep into the world of fermentation, where I discovered the magic of transforming simple ingredients into tangy, nourishing creations with the help of microbes.

 

I’ve been fortunate to live in seven different countries across Europe and Asia, exploring flavors, experimenting in kitchens, and refining my techniques along the way. Inspired by these experiences, I founded Fischtal Foodlab to share my love of food with fellow enthusiasts in Berlin, drawing on the flavors, cultures, and fermentation traditions I encountered during my travels.

 

To me, food is all about community: bringing people together through flavor, creativity, and hands-on learning. I look forward to seeing you at one of my workshops!
